EXECUTIVE SUMMARY
Operations management is vital in any manufacturing or service industry. The Cakes & Slice is a
typical bakery and has a series of manufacturing and service operation aspects. A few of its
aspects like productivity, inventory management, capacity and forecasting and quality
improvements have been discussed in this report. The adding of baking table and ABC
classification of inventory along with Economic order-quantity for inventory management will
surely improve the profit margins. The quality aspects need to improve with removal of waste
and setting of compliance reports and quality checks. The quality needs to be in-built and
therefore the raw-material suppliers and employees need to be made partners in this. Finally
new markets entry is recommended but without any capacity addition.

INTRODUCTION
The various operations management aspects at Cakes & Slice are discussed through this
eport. The company has a good per employee sales value. The product range is wide and it
has expanded in new geographies. The report deals with productivity issues and then
inventory management and followed by capacity studies and quality improvement plans.
PRODUCTIVITY AND PROCESS IMPROVEMENT
The productivity and process improvement are linked with many operational factors. For a
given demand the capacity utilization is dependent on many factors like labor productivity,
machine productivity, product-mix design, and peak hour demands, constraints in the system
and quality aspects. In doing the productivity and process improvement study the above
