It is clear that cucurmin is a phenol. Phenols are slightly acidic. They reacts with alkali like
NaHCO3 to form a salt. The phenoxide ion formed as a result of salt formation is stabilised
y resonance. So it recats readily with the NaHCO3.
C6H5-OH = C6H5O- + H+
Phenoxide ion formed is more stable by resonance. Therefore it is formed. The phenoxide
ion takes Na+ from NaHCO3 and forms a salt.
The enolic H is also acidic. It gives H+ to form enolate anion. Enolate anion can also take Na+
