Please explain the solution given for this lab assignment. Why do we need to use the value of (90° - 14.5° = 75.5°) as the angle of incidence in the 2nd part of the solution? I feel that the correct input is 14.5° to calculate the final answer.

There are few possibilities:- 
1) If the light ray strikes exactly the opposite face of the cube, what you are thinking is correct. 
2) If, however, the light ray after entering the cube hits the face of the cube perpendicular to it, 
then what is given is correct.
